My friend just gave me his MPC2000 classic, but it has no assignable outs or digital in/out. Is this a huge problem? Can I still use the machine?

It should have an analogue stereo out and an analogue stereo in. . That's all you need to get started.
Assignable outs are only for stuff like running into a mixer or multitracking.
If you are not trying to do anything like that then you don't need them.
Digital is only necessary if you want to keep the signal digital and feed it into or from a digital in/out of some sort.
