it's always baffled me especially for example the track "Number Song" by DJ Shadow, the sample from the metallica song Orion, how in the world did someone listening to that just up and say oh shit that's Orion, because if i recall Shadow never disclosed that at all and was pretty miffed when it got exposed.
I don't think tracks were planned that way. I guess it was more like havin fun with sounds and samples. Start with one sample and make it sound good to you. Then put another record on the turntable and listen for something that might fit. sample it and make it sound good to the first sample. Take a synth and jam with these two samples and create a sound and melody that fit and so on.
Also, if your ears are trained in melody/sounds you sometimes hear a song that has some melody/sound/vibe/ that remnds you to another song. If thats the case put them together. As a DJ chances are even better to find such songs that will fit.
