is tracking simply recording each sample performance on its own track, or is there more to it than that?

There are no dumb questions here.......at least not many. :wink:

When people say "tracking" they usually mean the process of recording something onto a multitrack tape, or digital multitracker (eg ProTools.)
....whether it be vocals, samples, guitar, whatever....
It's just referring to the recording phase (as opposed to mixing phase, or mastering phase.)
