is tracking simply recording each sample performance on its own track, or is there more to it than that?

There are no dumb questions here.......at least not many.

When people say "tracking" they usually mean the process of recording something onto a multitrack tape, or digital multitracker (eg ProTools.)
....whether it be vocals, samples, guitar, whatever....
It's just referring to the recording phase (as opposed to mixing phase, or mastering phase.)

yup. ANd when you do track.........usually you want to try to get evetything on its own track. That means, recording each instrument on its own track/channel so you have more control.
