does anybody know how mannie Fresh gets his snares to roll like crazy especially like he does in the Young Gezzy song and then what?

Try the note repeat button with your quantize set on 32nd notes.

if your hands arent quick enough to play the rolls then your best bet would be step edit or slowing down the tempo to a speed that you can play and then changing the tempo back to the original speed. As for the tuning of the drums Id just assign the same sample to about 4 or 5 pads and tune them accordingly.
