Sampling Old Vocals and Riffs

Can anyone explain how producers sample vocals and instruments within songs?

I.E. Making and older song acapella or instrumental.

with old records you can sometimes extract vocals or instruments which have been hard panned left or right.....

'memphis soul stew' by king curtis is a good example of one of these tunes- the intro is bass and vocals which are panned hard left and hard right making it quite easy to extract one element or the other....good source of samples that tune.....

There is alot of software out there where u can seperate the stereo/mono fields and save accordingly.
