NEED HELP WITH RECORDING MIDI PLEASE!!

There is nothing wrong with either your MPC, your keyboard or your midi connections, but it sounds like you don't properly understand midi.

when i change the channels to record another sound i dont hear anything

If you are changing the MPC midi channel number of the track which was playing a sound on your keyboard, you won't hear anything unless you have another keyboard sound set to that new midi channel number.

and then when i change a sound on my keyboard it changes the sound i just recorded

Yes ........ that is what happens with midi. What you have recorded onto the MPC is a series of numbers which tell the keyboard what notes to play, where & for how long etc. If you record those numbers using a bass sound, but then change the keyboard sound to a piano, the MPC will play the bassline with the new piano sounds.

What is the keyboard? Is it "multi timbral" meaning it can play different sounds on different midi channels at the same time?

You can play multiple sounds, but like I said before, the sound on the keyboard that the MPC plays isn't locked in place the way a sample inside the MPC is.

If you have one sound in the keyboard set to play on, for example, midi channel 5 & another on midi channel 6, you would have a track on the MPC set to channel 5 & another to channel 6, & record your relevent parts on those. But once again, if you change the keyboard's sounds for those midi channels, the MPC will play the new sounds.

You need to check the keyboard's manual for how it plays multiple sounds.
