Just ordered the MPC.. a few questions

I've been doin research for some time now.. and I narrowed my choices down between the MPC 2500 and the MV 8000.. I was thinking about the MPC 4000, but I've read that it is quite unstable so i skipped that. Anyways I've been at guitar center for the past week just playin around with both.. the MV had all the extra features.. but I was able to start up right away on the MPC 2500 and it was quite enjoyable.. so i ordered one last night.. anways I have a few questions if you guys don't mind answering them..

1.) I know the MPC is used mostly for hip hop, rnb, etc.. but can I use it to compose music like this? (www.myspace.com/boomboxheads) <-- some stuff i did on fruity loops a while back ..

2.) I have the east west colossus software which i recently bought and installed on my pc and I was wondering if I would be able to use my midi keyboard to directly record what i play from my PC into the MPC so that i can assign to pads or what not later on. And how long could my piano sample (in stereo) on the mpc (maxed ram) be that i play through the midi keyboard. BTW I use a M-AUDIO 88ES KEYSTATION USB .. WILL THIS WORK FINE? thanks

3.) Do you guys feel the polyphony in the 2500 is sufficient enough? Im talking about for making full blown music.

might be a little more difficult. Switches up a lot , not really a steady loop, but it can definantly be done.
