...so, it can not sample as stereo, you can sample left and right seperately and then join them inside the MPC60 to create a stereo sample.
I do not see how this can work correctly. When recorded seperately, each side of the stereo sample will have a different amount of space at the beginning, so you could not sync them up properly so they play back in time properly, as per the original stereo sample. You might be able to get them close, but it would not be the same as a true stereo sample recording of the original source.
And, it can playback stereo sounds that are loaded off of disk...
