how do you select the 1k as the sampler in the program?

you don't have to select a the 1k. Just chop up your sample, then hit export. Chose WAV as the file type then save it. then export it to your CF card or your MPC. your better bet is to get MPC creator, then you can map it out from there then have a program file already made

I don't believe Recycle 2.1 even supports most samplers now due to us living in the day and age of soft samplers - I read that somewhere but I'm not going to tell you where

It is not a matter of Recycle supporting most samplers, but whether it can at a minimum export as WAV file (which I think it will for a very long time). Recycle has never supported the MPC series but a few have managed to easy work around this by designing software that reads the other formats that Recycle does support, whether those formats are sampler formats or not.
