I tried to spit to the beat myself just to see what it would be like if somebody spit on it and that "slight pause" really throws you off...
If there is a gap, that means the sample is too fast. So you need to cut out the part that starts going too fast and slow it down. If the part that goes too fast is it's own sound, and not part of another sound that is not too fast, then you don't need to separate it. If you do need to separate it, you will need to assign the new sound to a pad and record it in the sequence where the sound should be.
To slow it down, you need to increase the percentage in the timestretch screen. When you timestretch, the MPC creates a new file with the stretched sound. Make sure you are reassigning the new stretched sound to the pad where the too fast sound is and see if it fits. If not, delete the that new stretched file, go back to the original sound and adjust your percentage and reassign the generated sound to the pad again. Just keep trying til you get it on beat.
I haven't used BPM match, so I can't advise you on that. I usually cut my needed stretches so the files are small and stretch quickly, instead of stretching a large file.
