I have had the hardest time using my 2500 as a master with a Roland Fantom-S. The MPC doesn't control my Fantom.

I have looked at you tube videos read the manual for both 3 times.
Someone Please let me know if this is right?

MPC = Master, and Fantom = Midi Slave

MPC = midi out A to Fantom = midi in

MPC: Stereo Out to Mixer In 1&2, and Fantom: Stereo out to Mixer in 3&4

MPC: Mode Pad 9, (SYNC) Sync in: OFF and Midi Out: A

MPC: Mode Pad 9, (MIDI) Active Channel: ALL, Soft Thru: Omni-ALL, Program Change: ON, and Internal Sound: ON

MPC: (Main Screen) Shows The tempo not EXT also should it be set to 1A? and should my Type be: Beat or Midi, and does program have anything to do with it?

It Plays back double and hold a note when I have another midi cord from MPC to Fantom.

First of all , have you set the fantom to " Local = off " ?
(this means that your fantom keyboard does not play the notes straight from the fantom , but goes through the mpc and then to the fantom)
Cause if it's on , you double trigger your notes when you play the fantom.

Then when you want to play your fantom , you'll have to set the current track in the mpc to a track with the right midi output assigned to it ( like track 1 = midi 1A ) . Also make sure the program is set to off or you will trigger the sounds in the mpc.

And about your synch problem.
The easy solution would be to just sequence everything on your mpc and not synch them at all.
But if you wanna synch them it should be enough to just set the midi/synch settings in the mpc to the right midi output ( A , B , C , D ) , then Mode : Midi clock and mmc : on.
Then on the fantom make sure you set it to " slave to midi " with the right input selected.
I don't know the fantom so i can't tell you what settings and where to find them.

And also , double check your midi connection if it's plugged in right and in the correct input/output.

Greetz...
