Honestly, just keep using them and they will break in...and no double triggering anymore. Adjusting sensitivity will not stop the pads from double triggering...only repeated use does...and it has nothing to do with somehow gradually overtime learning how to hit the pads in a specific way.
i bought a used 2000xl back in 2001. for the first few months, i was double-triggering pads until i finally got used to hitting them. it wasn't the pads "breaking in", it was a used mpc, the pads would have been "broken in" already.
even now that i'm on a 2500, every so often i'll double trigger pads, and i admit that it's because i'm hitting the pad twice.
i guarantee that if this guy lets someone who has had the 1000 with the new pads for a while use it, they're not going to double-trigger.
