You can add any parameter that way, except the ones that make no sense (which are very little), like the low and high key of a keygroup for instance.
It's a neat feature that saves a lot of time
What Jauly describes above is true, but only in program mode. In keygroup mode, you can not deselect keygroups (which makes sense again).
You have to play around with it to fully appreciate it
Instances:
you have a keygroup program with the same sample in two layers.
With all keygroups selected it is very simple to pan one layer left, the other right, detune the second layer a little a voila: fat sounding program.
Make all samples one shot or not. (handy when important dry wav files, or samples from a third party sampler which program settings are not supported ).
Put a filter on all samples in a (keygroup) program.
Etc. etc.
Set one or more modulation routings on all samples in a (keygroup) program.
Set your amp envelope for all samples in a keygroup (program)
All in all it is a great way to make main settings on your (keygroup)program. After that you can finetune levels, pitch etc per pad/keygroup.
