Im not 100% sure what you're asking so I'll go through the process of doing 'what he did' using an MPC3000 and Cubase 4.
1. Create a 16 track sequence template on the MPC, each track is set to send MIDI out to its corresponding MIDI channel.
2. Create a 16 track sequence template in Cubase 4. Allocate drums and other instruments to each track using virtual instruments. Set these track so that they recieve MIDI from your MPC as per the MPC template you made earlier.
3. Sequence your tracks into the MPC sequencer using the pads and/or a keyboard attached to the MPC's MIDI In port.
4. With Cubase as MASTER synchronice the MPC using Midi Clock or Midi timecode.
5. Bounce up to 16 tracks of MIDI (virtual instruments) at once, rendering each to Audio in Cubase 4.
6. Extract individual tracks/ stems as required for system transfer, backup etc, or continue to work within Cubase.Im not familiar with the Cubase 4 interface, but I would expect information on bouncing and extracting audio files to be readily available in the
MANUAL. Surely?

http://www.youtube.com/watch?v=drRE8SANZcsI understand that Cubase may need some tweaking to receive MIDI on 16 midi channels simultaneously, it is not the default mode of operation which is why it is good practice to set up and use a TEMPLATE for future use.
