Hi, i've only recently had my mpc2500 with jjos2xl and it gives you a choice of INST and DRUM when making new a new program...
is it simply just a case of choosing DRUM for your drums and INST for everything else?

No.

Instrument programs are used for multi-sampling real instruments.

Drum programs are just a normal MPC program.

Inst is the preferred way of setting up a chromatic patch. If you want one or more samples to be played chromatically then this is a good way to do it. Also, this is the only way you will be able to use an external keyboard to play the notes chromatically since 16 levels doesn't allow you to use anything other than the pads to play the sample chromatically.
