I've built a few synths and definitely recommend MusicFromOuterspace as a good starting point.. the "soundlab" is a good diverse synth, lots of mods you can do to make it into something compatible with your setup.

If you want to build a modular synth, module by module, then Blacet is the place to go. great quality circuits, good prices... totally solid synth. a modular will drain your bank account though!!
