the point of stabs would be just to give something a little more variety, for example if you just have a loop sample that you played some drums under, and you had a horn stab or synth stab in the same key, you could put it over your sample to create a little less boring piece. maybe use the stabs so there is a more defined hook or something like that.

Stabs have impact, they also introduce variety and occupy a certain frequency range to help fill out a section.
But you can treat a stab like any other sample, bend it, twist it, stretch it, pitch it the possibilities are endless.
Too much brass can be overbearing, less is usually more.
