Sorry we got caught up in the laughter of seeing an old thread. But I'll answer your question, even though it's been answered around here.
80gb is fine if you really need all the disk space. I've only used about 10gb out of 80gb in my MPC1000. I'm sure I could've used up a lot more if I really wanted to. But in all honesty, 40gb would've been just fine for me. However, at the time(6 years ago), the price difference between a 40gb and an 80gb wasn't much. So I bought a Seagate Momentus 80gb. Seagate has been the most reliable out of all the brands I've used building PCs over the past 15 years. I still have a Pentium 1 PC running Windows 95 in storage that I used for old Akai sampler software that wouldn't run in Windows XP. The Seagate hard drive is as old is the computer and still works after 15-17 years. Just thought I'd share some personal experience with you, as I've been going strong with the Seagate Momentus.

As for installation instructions, I believe there may be videos on mpc-stuff.com, if you can't find them in the MPC2500 forum.
