It depends on your sample.

Samples that don't have left/right stereo movement can be converted to mono (imo kick drum, snare drum etc...

If your sample NEEDS stereo then keep it stereo.

Okay i figured it out with all your help. What if im using far more than 8 tracks, what options would i have then?

It's cool man, it's just ur hardware limited to 8 outs (10 if you hard pan main outs left and right and treat them as 2 extra indy outs).
Then you have to do another recording session with different sounds is all. Line them all up in your daw and you then 16 (or 20) tracks. Keep going if you need more.

Yep, all you gotta do is experiment on anything/everything we
say, do here, and it will all become clear after a few testings and stuff. :D

Sometimes you use the info and sometimes you don't, either you, your music
and workflow always win out.
