The technique described in the Rcycle tutorial linked by BMF will only get you so far as muting one or two sounds (I think) per note. This means that if you're working with more than 3 notes the technique will do you no good. Your best bet (other than actually getting a monosynth) would be to use a single sample set to monophonic, so that each note played in 16 Levels will cancel the previous one. Using a pro sampler like an Akai S-series, you can create an entire program of all the guitar samples and set it to play monophonic.
Otherwise you can just go back in Step edit and set the duration of each note to cut off at the beginning of the next note manually.
Of course, guitars are not monophonic instruments anyway.
