Didn't watch the vid. He probably use the mixer for mixing. He probably have the outputs of the MPC wired to the Inputs of the mixer. At least that how I would connect it

No. At least if you talk about the 2000 (xl) othersmight have slightly more. A mixer has EQ for every channel.

3-band EQ is pretty normal on mixers even the fixed frequency band on the cheap mixers. More advanced and expensive mixers have flexible full parametric 3 or 4 band EQs per channel but you still won't get something like "kill-switches"
If yyou wanna sculpt samples you should do this inside the computer that has way much more power doin stuff like this.
