Can one record live track mutes within the 1000?

No. But what you could do is: make copies of the original sequence with different tracks muted, then use song mode to arrange the copied-but-altered sequences into a new pattern.

So say you liked having drums and bass and chords going, then you wanna mute chords for a few bars.

Make a copy of the sequence that contains all of those instruments playing but mute or even delete the track you want to silence.

In song mode, you can arrange to have the first sequence play for a few bars, then the sequence with the mute, then go back to the original.

Another method would be to record your main outputs directly to a daw of you muting tracks. It's a perfomance technique and therefore your musicianship will shine.

Or you can record different samples directly from the main outputs as a sample in your mpc with all the different pieces muted and unmuted. Then make a program with each of these longer samples assigned to different pads. Now you can arrange these samples in a new sequence that will have your mutes.

What about, when recording out to DAW, you play the beat and mute tracks as it plays while it is recording into the DAW?

yes track mutes can be recorded into the sequencer. look in seq edit window
