I set up my midi clock out and MMC on A, and in ableton live 9 I enabled remote and sync for the input of my MIDI cable.

When I try to MIDI map, say pitch shifting, to the q slider, ableton live doesn't register anything for mapping.

From here;http://www7a.biglobe.ne.jp/~mpc1000/os2xl/button.htm; it looks like you can use the q sliders in MIDI, so why won't ableton map my sliders to functions?! :(

The pitch shift on the Qlink slider has nothing to do with MIDI ! this is why you are confused.
It is just shifting the pitch of samples not sending a midi message like the pitch wheel of a synth does.
If you payed attention to the manual you will realize that the Qlink can be set to MIDI but you need to choose the MIDI CC you want to use. In this case it is pitch wheel MIDI data so send the relevant MIDI CC.
Did this make sense at all? They are not the same thing, even though it seems to do the same thing. One is pitch shift of samples on MPC and the other is actual midi data. So read that manual again and set to correct setting to see the desired result. I do it and it does work with live.
