Some people like to sample to the computer and maybe EQ and edit a little there and then put that in the MPC. But the MPC is made to sample directly to, and all you need to do that is in all the OS's. OS2XL will offer the most versatility for sampling/chopping, but generally speaking you'll have no issues sampling directly on any of the them. Like I said you have the mixer to ground the turntable and the mixer takes care of the pre-amp needed for a phono output.

If you do want to record to a computer you can use Garageband, free stuff like Audacity, no need to have to spend. The seller tossed in a 2GB CF card so some samples is all you really are going to need to get started just by adding this 1000 to your current gear.

And this forum will always be here to help, so again congratulations on having it all fall into place so quick finding that loaded machine. :-D
