MPC 1000. Akai OS. Sampling. Wanting manual- not automatic.

Hi- I'm having trouble finding the answer to this- though I'm sure it must be quite straightforward. When sampling I want to be able to start sampling when I want to- by pressing 'record' or whatever when sounds are playing through.
In other words I don't want it to be automatic- by setting the threshold etc. I want it to be instigated by me.

Set the threshold to max and make sure the incoming signal never exceeds that threshold. That way, recording can only start manually.
