On an MPC3000 I'd do it by pressing the PROGRAM/SOUNDS
key and then selecting option 2.
You'll see a screen looking a little like this: ( minus the formatting errors that happen on this forum )

** Note the two Cutoff fields ( which will be in the bottom right of your screen ) ?
Each of these two fields allows a note number to be entered. Whenever
the note selected in the top line’s Note field is played, then
any currently playing sounds assigned to either of the note numbers
in these two fields are immediately terminated.
This is useful when it is desirable for one sound to cause
another to stop playing, such as a closed hi-hat stopping an open hihat,
or a muted triangle stopping an open triangle.
Each of these two fields allows a note number to be entered
(35-98). In each case, the pad currently assigned to that note number
is displayed to its right.
To disable this feature in either or both
fields, enter a note lower than 35 and “--/OFF” will appear in the
field indicating that no note is selected to be cut off.
