I think nym posted study while ago, singal quality was checked with wire clothes hanger and expensive audio cables and results were identical
The real difference that I've noticed though is in build quality (the solder joint). Neutrik connectors have more built in stress relief for the solder points than a cheaper connector. Also, if you buy higher quality cable....or just make them yourself....you can ensure that the soldering job is top quality. This way you won't have a cold solder and end up with a crack in the solder. There's really no reason to not be using top quality stuff when you can build cable yourself for under $15 for a standard XLR.
I like to use Mogami cable and Neutrik Gold connectors.
