I sold the SP12 Turbo with drive and disks on eBay for £875 ($1435). The 2nd set of disks was sold privately to a US Gearslutz member for £160 ($262). The value of anything is decided by the market when it sells. I will always seek to maximise my investments, particularly where demand far exceeds supply, as in this case.

Just because a used product was £500-600 a few years ago, doesn't mean it should cost the same today. Analogue synth buyers are well aware of this, as are TR-808 and TR-909 owners/buyers. Those are easily going for around £2000 at the moment.
And of course some used products are valued higher in the UK than in the US, simply because there are less E-mu product here to begin with. It was an American company after all and their products were costly to import in the 80's-90's, compared to Japanese products by Akai for example. Today you still have to factor in shipping costs, import taxes, damage in transit, return policies, voltage issues etc when importing from the US. Experienced and savvy buyers would rather avoid all the potential pitfalls by buying a UK spec product and collecting it in person if at all possible.
And yes, adding value is something that not only makes the product offering more attractive, but also improves your bottom line significantly. In this case adding value was a successful sales strategy, and a 30 day BIN or best offer listing allowed buyers the time to raise the finance. Not many people can raise over £800 in 7 or 10 days, so why list premium products on eBay for that long?
So what is the going price for a decent SP?
Whatever you are willing and able to pay.
