I purchased the Beatmaking on the MPC 1000 pdf book and went through it with my 1000 with JJOS a few months ago. I recently purchased a 2500 and installed the free JJOS as well. Is there any reason I should purchase the Beatmaking with the 2500 too, or does the Beatmaking for the 1000 cover most of what I need to know for the 2500? Are there any major differences between the 2500 jjos operating system and the 1000 jjos system? Also, if I upgrade to the jjos XL on the 2500 will I be able to open these projects on the 1000 free jjos if I need to?

The Free JJOS is essentially identical on 1000 and 2500, so if you already bought the free JJOS 1000 book there's no need to buy the free JJOS 2500 book, But if you are upgrading to JJOSXL (a very different OS in all aspects), then make sure you check out my JJOSXL Bible, which includes a discount code for JJOSXL :)

OSXL projects are not backward compatible, the program format (while still PGM extension) is very different.

You can open the free OS projects on the XL, although there is an automated conversion process that tends to mess up sequences due to the way it re-orders your pads into a chromatic order.
