Hi tacozip,
There are many changes (gains and losses). Hard to describe everything in deep but here is a quick summary :
First of all program mode is mode + pad 04. Mode + pad 07 is looper mode now.
Regarding drum program :

Different tab order, different layout.
The note order is different. Please read this :
http://www7a.biglobe.ne.jp/~mpc1000/os2xl/important.htmYou have non destructive mono/ stereo/ L+R / forward/ reverse settings. There is a chop field linked to NDC in TRIM MODE.
You have a level column. Very handy for pre-pre-premixing. There's another level column in the OUT tab which is affected by the mixer (Qlink and so on)
If you press WinDOW over the pad field you get there :

It's the layer screen. You lose one layer (number 4).
The behavior of the WHOLE button is different.
You gain aftertouch Xfade and CopyPad. (you can copy a pad or a setting with the UNDO button shortcut by the way).

F2 tab. In OS2XL you have ADSR (AHDSR in OS3)
The velo collumn is very useful if you want to "compress" your velocity.
LOOP&HOLD added to play mode

F3. In os2xl LFO is shared with mute (you need to press the button one time or two times)
So it's FILTER now. You gain envelope, depth and aftertouch principally. Filter2 settings are more limited. You gain EQH and EQL for mpc1K.

F4. It's PITCH in os2xl if you wanna mess with pitch settings (env, depth, aftertouch)

F5 for LFOMUTE. Regarding LFO you lose filter2 but you gain aftertouch (it works with pitch). Concerning MUTE you gain CYCLE.

F6 is WHOLE in os1 and OUT shared with FX in os2xl.
Different layout. Addition of a Track mixer.
It would take hours to do a comprehensive comparison thread so just try and have a look by yourself

There's a new type of program , INST program too.
Check the online manuals :
http://www7a.biglobe.ne.jp/~mpc1000/manual_e.htmhttp://www7a.biglobe.ne.jp/~mpc1000/os2xl/manual_3e.htmTo conclude I'd say that OS1 and OS2xl are like night and day. You lose 10% but gain 90% if you do the balance with all the features in the other modes.
