I don't have a proper studio mixer just yet, all I have is a dj mixer vestax 05 pro, the output on the monitor is mono so I have a 1/4 inch jack from monitor going into the stereo output on the mixer with only one of the two stereo cables ( red/white) going into the mixer.

Not ideal but will I be loosing sound quality hooking up mono to a stereo connection?

In the case of stereo samples, you'll need left and right in order to properly hear the sample.
Exxample, any sounds going from left to right vice versa, any stereo effects or changes in the entire sound, stereo monitoring is needed for that.

to understand your question correctly:

you have a vestax dj-mixer (which model of the 05 pro?) and two studio monitors, right?
which brand and type are those monitors? active or passive?

if they are active you can connect them with rca to 1/4inch jack cables, using just one side of a stereo cable. you need two cables, or you can just rip your one stereo cable into two halves, but be careful not to rip the sleeve while tearing the cable apart.

better solution is to buy proper cables to connect to the main outs or to the booth outs of the mixer.

what other equipment do you have hooked up? turntables, mpc?

do you just run thru the vestax to hear your music or do you sample?

give us some more detailed information, so we are able to provide better help.
