You can record live instruments, just like vocals, directly into MPC Software as a sample.
Problem is that you then have to manually record/place an event into the MPC sequencer to trigger that new sample at the correct time within the sequence, if you are playing along with an existing sequence and want the new sample placed at the correct position within that sequence, so that it is in sync with it.
If you are getting the laptop mic into the MPC Software record window, and the Renaissance audio outputs, it sounds like maybe the laptop mic is set to be the MPC Software audio input.
Have you changed the Device in the MPC Software Preferences/Audio to be the MPC Renaissance, and are the Renaissance audio inputs/outputs ticked as being Active Output Channels and Active Input Channels?
Where are you listening to the output of MPC Software, through the laptop audio outputs, or through the Renaissance audio/headphone outputs?
Where are you plugging the bass into, and how do you have the input select switches set on the top and rear panels of the Renaissance?

That is only when monitoring while recording it, isn't it?
Once recorded, as a mono file, it should be panned wherever you choose it to be.
Maybe, if being panned to one side when recording a new sample is a problem, and you are running the Renaissance stereo output through a mixer before it reaches the monitors/headphones, you could pan the left/right audio output of the Renaissance to centre while recording the sample?
