MIDI Learn - possible to map ext keys/pads?

Apologies if this has been discussed, but I've tried searching various phrases here and elsewhere, along with reading the manual and watching a few videos on YT.

I'm wondering if you can map, using MIDI Learn, a pad or key on an external controller to a pad within a program for actual note/velocity data.

In everything I've seen so far, I've only seen parameters such as mix volume, pan, etc. being mapped.

My use case would be to use my Launchpad Pro to map pads from various different programs to a single control surface so I can somewhat compensate for the lack of multitimbral MIDI.

Full disclosure I sold my MPC Live because I'm an idiot, so I don't have one to test currently. But will probably by one again because, you know, idiot.

Not in standalone, but in software mode you can go crazy with the mapping’s.

Panning , Vol level, mute, solo, and few other standard options. In the software almost the entire screen is midi learnable.
