I was going to suggest that as a workaround as well. I keep meaning to record a vocal "one", "two"... "eight" and route each to the specific out to see how it works. This shouldn't be that hard, but I haven't verified it myself yet.

That's exactly what I figured, that L+R could be routed.

Welcome to MPC world, I'm new here too and am having a decent experience and do wish to leave my computer out of the equation.
I too figured out the once the eye is clicked in the main window you can choose the output as stereo pairs or 8 mono. Personally I'm likely to use them as stereo pairs.
