Recording and laying new sounds over what I previously recor

Hello friends I just got a mpc 500 I’m totally new to this but I’m very good on drums so I need to know the basic on how to lay a drum beat stop it then lay hi hats or whatever sounds I wanna over my beat... thanks

lay the instruments in your beat out on tracks in a sequence - have each of these tracks be a sound - then you can use the track mute to mute certain sounds or bring them back
