I'm just starting out with the MPC One. So far I've got;

One sequence
Drum synth multi on track 1
Drum synth shaker on track 2
A sampler on track 3, Pad A1 in a programme Hard Clap

I've sampled some noise from the Micro Freak synth and want to add it to a new programme separate from the Hard Clap program.

I can't create a new program for the Micro Freak sample.

I've selected an unused track. However, there is no pencil icon in the program section. The only program I can select in the drum program section is the hard clap. How do I create a new program?

It's probably something really simple but I can't work it out. Or I may well not be understanding something about the MPC workflow?

Any ideas?

Hey Jack, welcome to the wonderfull world of MPC's. It's great.

When you start a new track, press the little 4 squares button in the track window. Below you see ''drum program''. Press the square white button with a plus in it and voila: you have created a new program. Next you'll want to head to program mode to assign your sample to a pad

Welcome! It's normal because you're new to it, it takes some time to know where everything is, but within a few weeks you'll have developed a nifty workflow :) good luck and have fun.
