Was wondering if anyone else has this issue. Whatever audio device is in Windows default, MPC can't use it for audio. I have to remove it as default playback device in Windows for it to work with the MPC. Previously I had it working but had to reset every time the MPC software launched. Now it won't work at all. Other applications like UVI workstation, Maschine etc. don't have this issue. I use the same sound card for computer playback as I do for my DAWS and have for years. Note that I am only using one application a time. The windows exclusive mode setting makes no difference either.

Also note that the software does not have the same issue if I set the MPC One hardware as the default windows sound device. In that case it works just fine. Is this a bug or just how MPC software works on Windows?

Ah man that's sounds so frustrating!
Yes I have been having a similar experience since day one (MPC Studio Controller). Where by you have to select the audio device each time you load the software. I stopped using the software and got a Standalone (Live) too much fiddling to make a beat kills creativity.

That said, try loading the software in administrator mode and see if that lets you change it.

Thanks for the suggestion. Unfortunately run as admin does not fix. Akai need to fix this issue. Does not happen with any other software. I hear you on running standalone though. Probably the best way to go to be productive. You sacrifice using plugins but sometimes I wonder how much value that adds vs not dealing with the internet and tech issues. Sometimes less is more.
