I thought the name "Step Recorder" was off too, but it didn't take away from the demo.

I think Joe uses that made-up name deliberately to draw attention and tell people that there is a step recorder, kind of, even though it's a bit weird to use and Akai doesn't call it by that name. Having the functionality hidden in an obscure place under an obscure name prevents people from finding the whole thing. Which can be seen in the video's comments.

It's a bit clunky but it's there, see what you can make with it. People have made music with much more bizarre hacks, so why not.

By the way, I don't know if it was shown on the video, but while you have the "step recorder" on i.e. List Edit Mode active and recording (REC blinking), you can simultaneously have the pads set to a suitable Step Sequencer mode like Melodic, and then you can at least remove notes by using the step pads. Within limits of course.
