Hi, just getting my launchpad pro Mk3 setup in custom mode to control a bunch of things with the MPC One. So far setup volume faders and track muted nice and easy. One thing I'm struggling with is that track arm doesn't appear to be a mappable midi learn function. Am I missing something?

I don't think it is possible. You can do it differently, though. In midi/sync you can set midi program change to select sequence / track / program

So when you hit PC 01 - 10 and track is armed, and you have it set to track you can select which track is armed. Unfortunately it's impossible to arm multiple tracks via midi as far as I know. So it works well, when you need to select different tracks within one sequence in free time. If you have whole setup like midi keys , pads and else you'd probably be better of setting up tracks' monitors to in and setting pc to sequence, so it would change in time with new sequence

There goes my grandplans for using the launchpad to control the MPC.

You could try using fixed midi channels for each track and monitor to in. Though it would mean thorough preparation / template.
