MPC pad mute function

Hey there! Another beginner here. Recently got myself an MPC ONE, started learning and ran into a track recording question. I'm familiar with the "Song" tab in the menu, but is there any other way to record a track? Preferably with pad mute, since its much easier for me to disable pads throughout the recording rather than arranging sequences. And if you can't record with pad or track mute, what's the purpose of these functions? If I want some instrument not to play in a sequence or track I can just disable or delete it, don't really see any sense in making a separate tab for that. Any help is appreciated, thanks a lot!
