My guess: users loath administering a general purpose OS and its host of integration problems with random software... They want the packaged it-just-works experience of a system whose producer has done the integration drudge work for them... That is the baseline demand.
The DAW-in-a-box vs. Music Instrument rift comes on top of that common ground. I think that the DAW-in-a-box crowd fail to accept the tradeoff: the cost of the robust packaged experience with excellent hardware integration is limited features... No manufacturer will promise all the software on top of a system that does all the things - complexity is antinomic to industrial reliability.
That said, all things remaining equal on the MPC platform, HDMI out and USB mouse support would not disrupt the equilibrium nor any existing usage, and might win a bunch of misguided yet profitable customers.
Product management and users with varying degrees of understanding of the stakes, and antagonistic demands... This feels way too much like dayjob !
