make sure you are saving "all programs and sounds", as well as saving "all sequences and songs"

actually you just want to save the program with sounds, and the sequence. You don't need to save ALL, that's only if you want to save multiple programs and sequences.

cos usually I just make one folder for a beat, then save everything in that one folder - samples, prgrams, sequences...
what should i be doing?

It is perfectly ok to save all data belonging to 1 beat in 1 and the same folder. DON'T save data of 2 different beats in the same folder, more often than not you will overwrite samples by accident or even sequences.

What your doing is fine you just don't have to save the ALL files, unless you have multiple programs or a song with a lot of samples.

just save your beats in seperate folders and save all sequences and programs and sounds. thats what i do at least.

If your a person who is mad about organisation then read on.
a good way to have your shit is to have a folder called "ALL&SEQ" this could be broken down into Sub folders as well for each song if you have sinlge seqence files. Reason why I say this is because if u use .ALL file type you wont be abled to use it on other versions of MPC.
Now the important part. PROGRAMS, I have one folder for this called "PGM&SND" because I sometimes use the same drums on different tracks etc. I dont see the point of having duplicate copies of the same sound on my disk. So I have the sounds central but with a whole heap of PGM and APS files in there so they can find the sounds i constantly use.
I give my bro ButtaSmoove props for showing me this technique years back!

i once did a similar organizational scheme as you have presented. the problem i ran into was connecting my programs with the correct *.all files. often times they would get mixed up because i used some of the same programs with different *.all files (i know now i should have renamed and resaved the program files for each of the *.all files). the worst was when i would have some guests over who wanted to jam on a beat but i couldn't reconstruct it again with the correct program with the correct *.all file.
what i do now is somewhat similar, but different. working only on a few beats at a time, the new beats are saved in a folder named temp. any that are finished, or are more polished, i file away into genre system in accordance to the feel of the track so i can pull them up quickly when previewing with a certain artist. this way i am able to keep separate the main ones i am currently working on and have a descriptive account of the older beats. i am also getting around to making a cdrom of some of those past beats to conserve space on the HD.

Easy way round it is to name them (all programs & Sounds) after each song title...That way whateva pgm(s) used will get a recall...Its still calling up the same old samples so there shouldn't be a problem for you remembering what u used and what Drum (1,2,3,4) each prog' was on
I went thru all kinds of saving methods b4 (Quite messy when I look back)...Now, I keep all my samples, programs & all.*.'s in one folder...Seq's & Dumps in another folder (Seq & Dumps are also named after songs) Midi grooves in another - Using a HD makes this easy/easier to keep tidy and in order....Multiple Zips is where it can get messy.
