You can listen to all 16 midi channels at the same time and play 16 parts of the patches.

multitimbrality means that your synth or sampler or whatever is capable of playing more than 1 program at the same time ech responding to a different midi channel.
Polyphony means your synth/sampler can play multiple notes at the same time (my Korg Prophecy for example has no multitimrality and no polyphony.)
