It is so you can tap the tempo you want your mpc to flow to. Just think of the tempo in your head and tap it out on the TAP TEMPO button and your mpc will adjust to your taps.

do I need to tap the tempo of the metronome?

its too hard for me... the bpms jump to like 200, 150, etc

Your fingers are the tempo. Follow the tempo in your head and then tap it out on the button. The mpc will sort of read you thoughts and sync to your finger taps. The tempo jumps because you are not precise in your tapping tempo. It is following YOU. Just tap how fast you want the metronome to go, you are controlling the metronome when you tap. Get it..? Keep tappin the same tempo and watch the tempo numbers, try to stay precise and the tempo will stay around the same numbers..
