AFA prod. tech. first thing, is that Jamaicans are MUSICIAN, I mean INSTRUMENTISTS. i.e Sly would play drums live pon MP during the entire 3'50"... same thing for bass, keys ect...
Not saying that there're not rec patterns, but just keep that in mind.
Second: most famous producers in JA are engineers FIRST (Tubby, Perry, Alimantado, Mad Pro ect...). So like skala said, the mixing deck alongside FX are producers favorite. Talking bout DUB music...
What you're calling "Dance Hall" is the Hardcore side of Reggae. Newer producers like JonJon, Jeremy Harding or others use musicians and electronics machines such as MPCs. Jammy's sons have got ALL MPC models at St Lucia Road...
I know J Harding, Dave Kelly and others use to use either software or drum machines to do dem stuff...
Despite the fact that a lot of keys & drums sounds (specially in "early Dance Hall Style") cames from off Korg M1 & RLD SPD, Jamaicans producers are trully involved in it, so no reason not use Reason, PT, and all king of nu technology!!
However, at Anchor studio (dat is one of the besrecording place ovadeh) they're really proud of the 3 NEVE's desks, and Studders recorders; while they can mix via PT or Otari DtD... Skilfull at keeping the best of analog with the best of digital
