I sample in stereo if the main sounds I'm concerned with are panned centre or near centre. I find that sampling in stereo, in this case, I keep a lot of the dynamics from the original recording.
I think sampling drums mono is a good idea, because it makes the drums sound harder, flatter, and more full, which is a good thing.

By the way, in my 1K, when I select the channel I want to use in TRIM MODE, both of the channels sound the same. I know both of the channels are different because I heard them seperately in RECORD MODE (first MONO L, then MONO R).
