but to answer your question


you are already able to edit samples with the old os

but with the new os

their are new options available that help you edit samples even more extensively (ie timestrech zoning patchphrase)

if you buy a new mpc1k and it's black, it comes with os 2.0 when you get it, just download 2.1 from akai's website. it's free.

if you buy te red/blue one, it will have up to os 1.07. just download the 2.1 os and install it.
