First off, read your manual. It's all in there. You will NEVER conquer the learning curve on the MPC unless you put in the work to actually read about it. The manual is like the force in Star Wars. Use the Manual.
Second, the MPC2000 does not have storage capabilities like a computer hard drive would. It has RAM. You sample audio into the RAM and give it a name, and the MPC makes it a .SND file. As soon as you turn off the unit, the RAM loses power and the samples are gone. To save sounds so you can access them after turning the MPC off and on again, you need a storage option of some kind. Personally I use an external 100MB zip drive, connected to the SCSI output on the back.
Thirdly, to save files you must go in the Disk screen (Shift+Disk) and press the second button (SAVE). Under Device choose whatever device you have, then tell it what you're trying to save, give it a name(open window) and hit DO IT. I'd advise against floppys cause they only hold 1 or 2 samples max.
Fifth, 'saving' the sounds to pads, is called programming. You want to program your samples to your pads. In the sample window, after you have recorded a sample it pops up a screen, in this screen you can use the pads to type letters and then hit enter to name your new sound, and also choose which pad is it programmed to. If you forget, or don't want to program sounds right away, you can do it in the Program Window by pushing Shift+Program. In this window you hit a pad, then under Sound use the data wheel to choose your sound.
