I know people that drop jams live by using track mute on the regular. Although, when I track out I do it from Song mode. I make sure that the samples I use in the different sequences are consistently on the same track number. Then I Solo the track I want to record individually. I add 1 bar of silence to the begging of Song Mode. Finally, I MIDI Sync to CuBase and press record. Now I sequence my drums in real-time all on one track, so for that one track I Solo it and lower the volume of all but one drum hit.
Without having 8 outs and an interface with 8 ins it is going to be time consuming. I don't know if my way is more time consuming than using Track Mute, but it works for me.
